COMMERCIAL ITEM DESCRIPTION
HAM PATTIES, CANNED
The U.S. Department of Agriculture has authorized the use
of this Commercial Item Description.
This Commercial Item Description (CID) covers cooked, round-shaped, hickory-smoke flavored ham patties packed into hermetically sealed cans requiring refrigerated handling and storage.
Salient characteristics.
The ham patties shall conform to the preparation and processing and finished product requirements as follows. The ham patties shall be canned not more than 30 days prior to delivery. The Department of Defense packing and packaging requirements are contained in the section “For Department of Defense procurements.”
A. Preparation and processing. The ham patties shall be prepared from either chopped ham or fresh ham (which is ground and cured during processing) with curing agents, seasonings and optional ingredients as permitted by Meat and Poultry Inspection Regulations (9 CFR Part 319) of the U.S. Department of Agriculture (USDA). Ham trimmings may be used provided they contain no excess shank meat, and the fat content of the trimmings is not in excess of 35 percent. Natural oil-based hickory-smoke flavoring shall be added at a minimal rate of 1 ml per pound of fresh meat.
B. Finished product requirements. The ham patties shall conform to the following physical and analytical requirements. Conformance shall be determined by end item examination.
Physical requirements.
No individual patty shall weigh less than 50 grams.
Patty appearance shall be normal for product prepared as specified.
The texture of the patty shall not be dry, rubbery, or mushy.
