Analytical requirements,
Percent fat shall be not greater than 30.0.
Percent salt shall be not less than 2.2 nor greater than 2.8.
Quality assurance.
When required in the solicitation or contract, the quality assurance of the ham patties shall be determined by the Agricultural Marketing Service (AMS), USDA agents. The product shall be examined and/or tested in accordance with the applicable provisions (physical and analytical requirements) in the CID and when applicable, the United States Standards for Condition of Food Containers currently in effect on the date of the solicitation and in accordance with the requirements in the applicable regulations.
End item inspection. The end item lot size, expressed as number of cans, shall be declared to the AMS agent by the contractor. Product from open cans used for product examination shall remain the property of the contractor.
Product examination. Eight filled and sealed cans of finished product shall be randomly selected from the lot, and the contents shall be examined for the defects listed in Table I. Cans selected for examination must be free from damage. The finding of any major defect shall be cause for rejection of the lot.
