2.  Fillets or nuggets shall not be (a) fractured (separated into two or more separate pieces), (b) scorched or burned; or (c) soggy, excessively oily or greasy, or sticky.

3.  The net weight of each cooked, fillet or nugget shall be as follows: (a)  Type I    - Not less than 3.0 ounces,

(b)  Type II  - Not less than 5.0 ounces, or

(c)  Type III - Not less than 0.5 ounce.

3.5.8.2  Cooked breaded products:

1.  The combined batter and breading of each cooked breaded fillet or nugget shall not exceed 25 percent by weight of the uncooked breaded fillet or nugget weight.

2.  Cooked breaded fillets and nuggets shall have a golden brown color within the tolerances of the current edition of the Poultry Division's color control guidelines.

3.  The cooked, breaded fillets or nuggets shall not (a) have more than one area of missing or not completely cooked batter/breading; or (b) contain lumps (outcropping of breading on the surface of the fillet or nugget) or ridges (excess breading which projects at the surface of a fillet or nugget).

4.  REGULATORY REQUIREMENTS.

The chicken fillets or nuggets shall originate and be produced, processed, and stored in compliance with all applicable provisions of the Meat and Poultry Inspection Act and regulations promulgated thereunder.  The delivered chicken fillets or nuggets shall comply with all applicable Federal and State mandatory requirements and regulations relating to the preparation, processing, packaging, labeling, storage, distribution, and sale of the chicken fillets and nuggets within the commercial marketplace.  Delivered chicken fillets or nuggets shall comply with all applicable provisions of the Federal Food, Drug, and Cosmetic Act and regulations promulgated thereunder.

5.  QUALITY ASSURANCE PROVISIONS.

5.1  Product conformance.  The chicken fillets or nuggets shall meet the salient characteristics of this CID, conform to the producer's own specifications, standards, and quality assurance practices, and be the same chicken fillets or nuggets offered for sale in the commercial market.  The Government reserves the right to require proof of such conformance.
